Berry Galette For Lazy Sundays

Berries are always such a treat. Bursting with flavours, berries are great to eat on their own but it’s even better in a good pie!
What can be more perfect on a lazy summer Sunday than the goodness of a berry galette?

Galette is basically a free form pie – very charmingly rustic. In this case, we don’t have to worry about a pie pan – just roll the dough, put in some berries and place it in the oven.

How to make this Berry Galette easier:

No time to make the pie? An easier way is buying frozen pastry from the grocery and use that as your crust. Unfold the puff pastry on a lightly floured surface and place your berries in the centre.You can also cut the puff pastry into desired shape and size. Fold all the sides inwards and bake.

Ingredients

  • For the Pie Dough:
  • 4 cups all purpose flour
  • 3/4 cups, cold water
  • 1 3/4 cups butter, unsalted (keep it cold, I usually freeze it about 30 minutes before use)
  • 1 tsp salt
  • 2 tbsp sugar
  • For the Berry Filling:
  • 3 cups of berries, strawberry and blueberry
  • 2 tbsp sugar
  • 1 tbsp lemon juice
  • Egg Wash:
  • 1 egg yolk
  • 1 tbsp water
  • a dash of salt

Method

  1. For the Pie Dough:
  2. Sift the flour into a bowl. Dissolve sugar and salt in the cold water.
  3. Cut the butter into the flour using a pastry cutter, or do this by hand. Work on it until the fat particles are "pea-sized".
  4. Add the water to the flour mix. Use your hands to combine and until the water is incorporated. Do not overwork the dough, it will make it tough.
  5. Divide the dough into equal parts, depending on how big or small you want your galette to be. I divided the dough to 3 equal parts.
  6. Form it to a ball and flatten into discs. Cover in plastic wrap and let it rest in the fridge for about an hour or 2. You can also freeze this dough for later use.
  7. For the berry filling:
  8. You can do this before you roll out the dough. Have the mixture sit for about 10 minutes.
  9. Hull strawberries and cut in half or leave whole if you prefer.
  10. In a bowl, mix the blueberries and strawberries and add the sugar and lemon juice.
  11. To Put Together:
  12. Pre-heat oven to 400F.
  13. Flour the surface and roll out the dough to 1/8-inch. Transfer the dough to a baking tray lined with parchment paper. You may also, roll out the directly on the parchment paper.
  14. Pour the berry mixture in the center of the dough. Fold the edges of the dough inwards to keep filling in place.
  15. Apply egg wash (whisk egg yolk, water and salt) use a pastry brush and apply on the dough. Bake for 30 - 40 minutes at 400F, until the dough is crisp and golden brown.
  16. Let cool and enjoy!
